1 cup very ripe mashed bananas
1/3 cup butter, melted
1/2 cup sugar* (originally recipe called for 3/4 cup sugar)
1 egg
1 3/4 cup flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 cup chopped pecans or chocolate chips (optional)
- Beat bananas until creamy.
- Cream the butter and sugar together in a bowl. Add the bananas.
- Beat in the egg, beating until smooth.
- Mix flour, baking soda, baking powder and salt together in another bowl.
- Add dry ingredients to banana mixture, stirring only to moisten.
- Stir in pecans, or chocolate chips.
- For bread: Bake in a greased loaf pan at 350 degrees for about one hour, until a fork or toothpick comes out clean.
For muffins: Pour into a lined muffin tin and bake at 350 degrees for about 25 minutes. Makes 12 muffins.
Suggestion:
* For a sugar-free option, you can replace the sugar with 1/2 cup of honey, or 1 cups of pureed dates.
