Makes two dozen.
3 cups flour
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
¼ tsp baking powder
3 eggs
2 cups sugar
3 tsp vanilla
1 cup oil
3 cups grated zucchini
½ cup walnuts or pecans (optional)
- Mix dry ingredients in a large bowl.
- Beat eggs until light and fluffy, in another bowl. Add sugar, vanilla and oil. Stir in zucchini and nuts.
- Stir zucchini mixture into the dry ingredients. Fill greased muffin tins.
- Bake at 350 degrees for 20-30 minutes.
Suggestion:
For chocolate zucchini muffins, add ½ cup cocoa to the dry ingredients in step 1.
