
6 slices of bacon, chopped
¼ cup olive oil
1 small onion, chopped
2 cloves of garlic, minced
Salt and freshly ground pepper to taste
¼ cup balsamic vinegar
6 cups baby spinach, washed and patted dry
¼ cup (or more) goat feta
- Cook the bacon until it is crispy. Add the olive oil, onion, salt and pepper and continue to cook.
- Once the onion is almost completely cooked, add the garlic and cook for about one minute. Add the vinegar and the rest of the olive oil and cook until it’s warm.
- Place spinach in a large bowl. Add dressing and toss completely. Crumble cheese on top. Serve immediately.
Suggestion: If you’re making this for company, you can cook the bacon and cut up the onion and garlic ahead of time so it only takes a few minutes to make the dressing.
